Ingredients:
-6 large eggs
-1/2 cup milk (or half & half for creamier texture)
-1 cup shredded cheddar cheese
-1/2 cup chopped spinach or bell pepper (optional)
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-6 strips of Berryhill Bacon, chopped (any flavor)
Instructions:
-Preheat oven to 350°F. Grease a 12-cup muffin tin or use silicone liners.
-Chop Berryhill Bacon into bite-sized pieces. Or use our Chopped Bacon.
-In a large bowl, whisk together eggs, milk, salt, and pepper.
-Stir in the cheese, veggies (if using), and chopped bacon.
-Pour into muffin tin, filling each about 3/4 full.
-Bake for 20–25 minutes or until puffed and golden. Let cool slightly.
-Store in the fridge up to 5 days or freeze for later.
